Gutti Vankaya Koora

Ingredients:

Brinjal – 250 gms
Poppy Seeds – 1 TSP
Cashew – 1 tbsp
Green Chillies – 2
Salt as per taste
Chilli powder – 1 TSP
Cumin powder – 1/2 TSP
Coriander powder – 3/4 TSP
Garam Masala – 1/4 TSP
Tamarind – 1 small lemon size
Jaggery – 1 tbsp
Coriander (finely chopped) – 1 tbsp
Mustard seeds – 1/2 TSP
Hing/Asafoetida – 1/4 TSP
Curry leaves – 10
Oil – 2 tbsp

Method:

* For the stuffing; add in poppy seeds, cashews, green chillies, salt, chilli powder, cumin powder, coriander powder, garam masala and some water and grind it to a fine paste.
* Soak tamarind in water and extract tamarind juice.
* Add in jaggery to tamarind juice and keep it aside.
* Make slits in brinjal and stuff the prepared stuffing
* Heat some oil in a pan
* Once oil is heated; add in mustard seeds. Let the Mustard seeds splutter add in hing and curry leaves.
* Once the curyy leaves are cooked add in the stuffed brinjals in oil by arranging them.
* Add in the leftover stuffing on top of the brinjals and add some water enough to cook the brinjals.
* Close the lid of the pan and allow the brinjals to cook in slow flame.
* After 10 to 12 minutes or till the brinjals are half cooked add in the tamarind and jaggery mixture and mix well.
* Close the lid and let cook till the brinjals are completely soft.
* Add in finely chopped coriander leaves and switch off the flame.

Gutti Vankaya Koora can be served with plain rice and ghee. This gravy goes well with chapathi, jowar roti, rice roti and ragi roti also.
